The Glebe Kitchen Restaurant
The Glebe Kitchen is the award-winning in-house restaurant at Eddrachilles Hotel, offering relaxed refined dining. Here seasonal Highland ingredients are shaped into a refined, relaxed dinner menu each evening. Dinner at The Glebe Kitchen is often cited by guests as one of the standout reasons to stay at Eddrachilles Hotel.
Why our dining is exceptional
Senal menus shaped around Scottish ingredients such as Highland venison, Scotch beef, and ultra-local crab from Badcall Bay.
Kitchen led by Head Chef Trevor Williams, recent winner of a Medallion D’Or and Excellence in Service awards.
Dinner is served in a relaxed-refined atmosphere in the historic manse kitchen and courtyard.
Many guests describe dinner as one of the highlights of their stay.
The restaurant regularly receives high praise in guest reviews for quality, presentation and hospitality.
This characterful space asowould originally have housed a tiny dairy, some animal stalls and the kitchen of the former manse where food from the c300 acre neighbouring Glebe lands would once have been prepared for the minister’s household.
Some 200 years later, we now serve seasonal Highland dinners from April to October. We welcome both guests from the hotel and from our wider community, visitors or long term residents alike.
The restaurant faces west towards the sheltered courtyard garden, its thick walls are infused with the memories and stories of people who lived and worked here since the 1800’s.
Many guests begin their evening in the hotel’s sun lounge, which looks south across Badcall Bay, with a pre dinner drink . Thiey may also opt to return here for their desert course and coffee, watching the changing light and enjoying the warmth of the wood burning stove.

Head Chef: Trevor Williams
At the heart of The Glebe Kitchen is Head Chef Trevor Williams, who has led our kitchen for six seasons.
Trevor’s career spans both formal fine dining and well-loved bistro cooking, with experience at some of Scotland’s most respected kitchens. Early in his career, he worked at One Devonshire Gardens during the period when Andrew Fairlie was awarded his first Michelin star.
He has cooked at the highest level for international and state occasions, including the Commonwealth Heads of Government Meeting (CHOGM) Edinburgh in 1997, where he cooked for Nelson Mandela,.
Before joining Eddrachilles, Trevor was for some years Head Chef at Burt’s Hotel, in Melrose Scottish Borders where he led a brigade serving a two-rosette dining restaurant alongside a highly regarded bistro and bar, widely known for its Sunday lunches and relaxed, high-quality cooking.
Trevor came to Eddrachilles on a short-term Head Chef placement and stayed for our 2017 season. He returned in 2021 for a season and the rest is history. What began as a temporary arrangement became a long-term partnership, built on shared standards, trust, and a way of working that suits both the place and the people who cook here. Not to mention our guests who are delighted the food served here. .
His food is thoughtful rather than showy, guided by season, provenance and balance. Menus change several times a weekr reflecting what is at its best rather than what is fashionable.
Under his leadership, we developed The Glebe Kitchen concept and its first year the restaurant was awarded an AA Rosette and has received national recognition for both food and service — a reflection of consistency, care and calm professionalism in the kitchen.
